Ingredients:
½ cup Coconut flour
6 x 60gm eggs
1 ripe banana
1 cup pitted dates
¼ cup pepitas
¼ cup sesame seeds
¼ cup sunflower seeds (for topping)
3 tbsps coconut oil
1 tsp bicarb
¼ tsp nutmeg
1 tsp cinnamon
Sea salt pinch
½ cup water
Method:
Preheat oven 175C
Line a muffin tins with muffin paper
Mash the banana well in a mixing bowl and set aside
Place dates, pepitas, sesame, coconut flour, cinnamon, nutmeg, bicarb and salt into food processor
Blend until dates are finely chopped and pour into the mixing bowl with banana, adding the eggs, oil and water
Combine well
Pour mixture into muffin cases ( if using a topping of seeds sprinkle on now)
Cook for 25 minutes , or until slice is cooked and bounces back when lightly pressed
Topping is a mixture of sunflower seeds, pepitas, sesame and poppy seeds
